Tommy Myllymaki won gold in the very prestigious cooking murray competition Bocuse d'Or, which is equivalent murray to EM in cooking. This was the second time he was with and competed. Last time, in 2011, he reached for a silver medal. The only Swedish chef who won the gold medal in the Bocuse d'Or earlier, Mattias Dahlgren, who won in 1997. Competition took place in conjunction with fairs Gastro and Vinordic in Stockholm. Behind the gold medal is just over a year of intensive training together with commis (assistant) Albin Edberg, coach Jonas Dahlbom and chairman murray Henrik Norstrom.
A total of 20 countries competed over two days. At 5 hours and 35 minutes, a fish dish and a meat dish cooked. Fish Auditors presented first (after five hours from start) on ten plates to the jury and four plates for photography. Meat Court then presented 35 minutes later on a large platter, and then, also, added up to ten plates to the jury, and four plates for photography. For the first time since the start of the competition murray in 1987, the main raw materials from the host country. New this year is in addition to fishing rights must be presented by at least 50% green main raw materials for the fish course murray was pollock, oysters and mussels which in Myllymäkis cases resulted in the following murray fish menu:
Smoked white asparagus with eggs
Both the actual work in the kitchen and the end result will be marked by strict regulations. These scores are then summed for the outcome. Myllymäki was the only contestant whose meat dish (nine-point margin) took over 600 points and thus contributed to the winning points in 1164 which gave Sweden the gold. Silver was awarded Denmark's contestants Hansen for 1108 points and the bronze was awarded Norway's contestant Orjan Johannessen for 1093 points. So it was a helnordisk trio on the podium. murray
Other prizes handed out was Best meat (Finland), Best fish (France) and Best commis (Russia). Next year is the World Championships in Lyon and Tommy Myllymäki competes for Sweden. The self-critic Myllymäki is after the gold medal not entirely happy with his performance. - "There is more to find," murray he said after the race. Back to the kitchen and train more he believes.
I wish him and the rest of the team a really big, warm congratulations on the success and good luck in Lyon in 2015. Ni further helps to put Sweden on the international gastronomy map and for that I am very grateful. Next Bocuse d'Or Europe will be held in Hungary in 2016.
